Southwestern Soup
- EASY TO MAKE, Prepared in about 5 minutes
(This makes a lot, but keeps well)

Ingredients:
2-3 cans of Chicken
1 Can each of Rotel Tomatoes
Diced Tomatoes
Pinto Beans
Corn
Kidney Beans (optional)
Green
Beans
2 Cans Chicken Broth
Finely Ground Onions (optional)
Garlic
(pressed or powder)
Cilantro (fresh, finely chopped or dried). (optional)

Put it all in a large pot & cook 20 minutes to all day,
adding water as needed. You can add more cans of anything you like more
or leave out anything you don't like (ie: chicken or rotel tomatoes to add more spice). You can also use
fresh chicken if you prefer. Wait to add cilantro (if fresh) the last
10 minutes before serving.
Serve with Mexican blend finely grated cheese & chips.






I don't use beans or onions, and an extra can of green beans. Also with
the chicken, open the can up and break the chicken up with a fork or
the lid before you add it, so it's not big chunks. And then I fill the
empty chicken can with HOT water after to add more chicken broth.
